Manage iPad multiple email signatures on iOS 5 - The iOS 5 is still officially lacking support for this feature. Apple hasn't made that option available.

If you need to do that, you can try the tip. Tap Setting > General > Keyboard, and use "Add New Shortcut…" to create many keyboard shortcuts for each different signature. You can also use Mail Enhancer to get custom signatures for per email accounts on jailbroken iPad.
